I would swap skunk and raccoon, personally. Skunks shoot liquid at you, and I imagine of the three that the raccoon would be most likely to burn down a building, it if could.
They would evolve into a Fire/Poison skunk with explosive gas, since methane is flammable. I’m aware that skunk spray is actually liquid, but the idea that it isn’t is a popular trope that they could do something with.
Opossum = Grass (grassland fighter)
Skunk = Fire (gas attack)
Raccoon = Water (washes food)
Fully evolved:
Opossum = Grass/Ghost (plays dead)
Skunk = Fire/Poison (self explanatory)
Raccoon = Water/Dark (steals stuff)

Skunks really tend more toward a toxic/poison element/type. By DnD standards, their self-defense is somewhere between Acid Spray and Stinking Cloud.
The actual skunk Pokemon is Poison/Dark type.
Liquid attacks can still count as poison. See the move “acid”.
