This is old canon I think but one of the big ones are the squid people who supply the Alliance with ships.

Mon Calamari, yeah, the species Admiral Akbar is. I don’t think it’s ever stated in the movie, but all the more round ships in ROTJ were theirs, meant to contrast with the much more angular human designs.
